It has been recognized that the feed of animals and the resulting food for the human end-consumer are intimately linked. A few years ago, Bügel (2003) posed the question whether the human micronutrient status of food can be improved by supplementing production animals with components that are believed to improve human health. The basic idea is feeding these putative health-promoting nutrients to domestic animals and to let them accumulate in the animal’s tissue in order to make them available to the consumer in the resulting meat and dairy product(s). This may result in programs for developing ‘added value’ or functional foods derived from livestock products. We present this development and define its ethical implications in terms of human and animal health and welfare, human autonomy and respect for animals. By defining these questions, we aim to show that an ethical evaluation of enriched meat products should not be postponed to the implementation of this development, but has to be taken into account in the current process of research and development.
