The diffuse chemosensory system (DCS) of the digestive apparatus presents a multiplicity of morphological aspects. Recent research provided a description of these elements, which contain molecules of the chemosensory intracellular machinery. However, the functional roles of the different cytotypes belonging to the DCS are not well known. The description of the functional roles of the DCS might be a first step towards the discovery of nutritional approaches targeted on chemosensory mechanisms. The data recently obtained on the DCS suggest that in the future it could be the target of strategic actions aimed to modify the voluntary feed intake in mammals.
