Abstract

Cordycipitoid fungi are a group of parasitic fungi mainly growing on insects and other arthropods. These fungi are known for their medicinal properties and have been used for centuries in traditional medicine. Over recent years, some cordycipitoid fungi have realized massive production. In this chapter, we focus on four cordycipitoid fungi, namely Cordyceps chanhua, Cordyceps militaris, Ophiocordyceps sinensis, and Tolypocladium guangdongense, and introduce their taxonomy, host range, geographical distribution, life cycle, industrial cultivation, and product development. These are the four cordycipitoid fungi that have realized commercial production in China. In addition, Cordyceps tenuipes, which is mainly developed in Japan and Korea, is also briefly introduced. Although some other cordycipitoid fungi can be induced to form fruiting bodies, they are far from reaching an industrial level.
