Summary

In Sardinia as in most parts of the Mediterranean we find, next to the specialized dairy breeds, local populations kept in extensive husbandry conditions and traditionally having a triple purpose: milk, meat and draught. With the evolution of agriculture and mechanization the purpose orientation of these populations has changed drastically towards the production of meat. While their potential in terms of growth rate and carcass quality is rather limited, they are extremely well adapted to difficult environment conditions and have excellent mothering abilities, an easy calving and sufficient milk yields for the calves. These are very interesting characteristics for crossbreeding with specialized beef breeds. The many years of original research undertaken in Sardinia show that this is the ideal way to increase beef production from local breeds. The crossbred calves show a better conformation and have higher growth rates as well as better carcass characteristics. A comparison between different breeds shows that the Charolais and Chianina sires give the best growth rates of the crossbred calves while the Piemontese crosses give the best slaughter rates. To obtain the optimum results of the crossbred calves’ growth capacity, it is necessary to distinguish clearly between the suckling period under extensive husbandry conditions and the fattening period in intensive conditions. Furthermore, studies showed the possibilities offered by the use of crossbred (F₁) females as dams to obtain good fertility and milk yield for the calf, keeping though in mind the higher nutritional needs of such females. From these data we could distinguish a system of production based on several levels, linked to the most profitable use of the specialized beef sire in crossbreeding with local breeds. This scheme is based on the localization of the various genotypes in distinct husbandry zones; it allows an integrated management of both the available animal genetic resources and those of the specific environment.
