The focus of this chapter is on the early stages of the chain of food production, processing, packaging and retail sale. Here, the risk of chemical migration into foods of animal origin is relatively low. This is due to the short-term nature of the contact, the low contact temperature, the repeat-use character of most contact materials involved, and the small area of contact as a ratio to the amount of food produced. With the paramount need for cleanability, to avoid the build-up of dirt and biofilms and so avoid any microbiological risk, most contact surfaces are hard and largely inert. Areas of vulnerability are consumable items that degrade during their service life, such as plastics, rubbers and silicones used to make hoses and tubes, conveyor belts and roller tracks, mixing equipment, pump and valve seals, filters, meat cutting boards, crates and trays, gloves, and such-like. The key to managing risk is to make sure that all materials intended to be placed in contact with the food, or which may reasonably be expected to come into contact with the food, are appropriately specified for such use in being ‘food approved’. The chapter aims to give a basic technical and scientific understanding of the factors that make a material suitable for different types and conditions of food contact.
