Modern food safety strategies are founded on a risk-based, longitudinal and integrated approach. Overall, it is well established that assuring welfare of food-producing animals contributes to, and is beneficial for the food safety aspects of their products entering the food chain. Application of good farming/hygienic practices (GFP/GHP), including provision of optimal animal welfare, enhances the animals’ resistance to infections and reduces spread of microbiological foodborne hazards. Farming practices particularly beneficial for both animal welfare and food safety comprise effective herd health management including responsible use of antimicrobials; hygienic husbandry including appropriate farm design and effective biosecurity; microbiological quality of feeds (both pasture- and compound feed-based) and water; effective animal stress management; hygienic milking and/or preparation of animals for slaughter. However, some practices that are considered beneficial for animals’ welfare may also increase the risks of foodborne pathogens in the animals and/or their products entering the food chain. Presently, it is not clear how to practically achieve the benefit risk balance in such situations; this aspect has been largely under-addressed. Furthermore, both knowledge and published data are presently insufficient to quantify the effects of the animal welfare-related factors on the food safety aspects even when they are in a positive relationship (i.e. both welfare- and food safety-beneficial effects), but particularly when they are in opposing relationships (i.e. welfare-beneficial but food safety-undesirable effects). Further – multidisciplinary – research on the relationship (positive or negative interaction) between animal welfare- and food safety-related factors at both pre-harvest and harvest levels is necessary.
