This paper gives an overview of highlights and conclusions of the Dietary Fibre 2003 Conference, based on the presentations, poster sessions and plenary discussions. Although discussions on the substantiation of the specific health benefits of dietary fibres continue, it was broadly agreed that intakes of fibre and fibre-containing foods are far below recommended levels in Western countries. With the rising incidence of obesity and type II diabetes, efforts to increase intakes are increasingly important. More powerful analytical techniques, reliable in vitro models mimicking the gastrointestinal (GI) tract, new information on how product structures can be altered, and the rapidly developing nutrigenomics toolbox are new tools being used to support dietary fibre research and development.
