The macroscopic and microscopic morphology in relation to function of the gastrointestinal mucosal epithelium with its mucus layer and some regulatory mechanisms are discussed. Attention is paid to the role of age of the organism and characteristics of the feed (short chain fatty acids, lectins) for length of the intestine, height of villi and depth of crypts, regulation of proliferation and functional maturation of enterocytes and composition of mucins in goblet cells. Some deleterious as well as advantageous effects of feed components, feed additives and microflora on structure and function of the mucosal epithelium are mentioned. The influence of dietary components on repair, defence and resistance of the intestinal mucosa is discussed. Possibilities to draw conclusions on intestinal health based on the in vivo and in vitro structure of intestinal cells are presented.

Based on the regulatory mechanisms in the intestine the use of feed additives and pro- and prebiotics to improve resistance and to stabilise intestinal health is commented.
