Abstract

Insect protein is regarded as an effective alternative to fish meal, contributing to the sustainability of marine resources. The study was conducted to evaluate effects of dietary mealworm (Tenebrio molitor) meal (MWM) as a substitute for fish meal (FM) on growth performance, physiological responses, and fillet quality in grouper (Epinephelus coioides). Four experimental diets were formulated with MWM substituted to 0% (MWM0), 10% (MWM10), 30% (MWM30), and 50% of FM protein (MWM50). Each diet was fed to juvenile grouper with initial weight of 10.66 g in a recirculating system for 8 weeks. Fish fed the MWM10 diet showed similar ( p > 0.05) weight gain, feed efficiency, protein efficiency ratio, and protein retention in fish fed the all FM control diet. However, the growth parameters of fish linearly decreased by increasing the replacement levels of MWM. Survival, hepatic thiobarbituric acid-reactive substrate values, superoxide dismutase and catalase activities, haematological parameters were not affected by the dietary groups. The docosahexaenoic acid (DHA) concentration of dorsal muscle in MWM50 group was significantly lower than that in other groups. The concentrations of plasma total cholesterol decreased with the increment of MWM replacement levels. In the sensory evaluation, fish fed the MWM0 diet had higher texture score but lower odour score than those in MWM50 group. Results indicate that MWM can replace FM protein at 10% without negative effectives on growth, physiological responses, and fillet texture for grouper. The replacement level at 50% reduces muscle DHA concentration and the score in sensory evaluation.
