Twenty eight lamb datasets with carcase weight, GR tissue depth and computed tomography (CT) composition data were used to demonstrate how well the industry standard measurements of hot carcase weight and GR tissue depth predict carcase fatness. Models predicting carcase CT Fat% were derived in each of 28 datasets then validated in the other 27 datasets. It was shown that the accuracy and precision of prediction using hot carcase weight and GR tissue depth is highly variable when these models were transported between datasets highlighting the need for a more robust industry measurement of carcase composition.
